Bhindi do-pyaza is a restaurant style, spicy, extremely delicious subzi. Bhindi means okra in English, and do-pyaza means twice the onion.
This subzi goes very well with roti, paratha and naan. This is my go-to recipe for parties at home!! A secret benefit of this recipe is that you get a large volume of the subzi even if you have small quantity of bhindi (okra).

Ingredients:
Bhindi (okra) 300 g
Oil ( 4 tbsp)
Onion (200 g)
Tomato ( 2 small)
Green Chili (2) split
Ginger paste ( 1 tsp)
Jeera (cumin seeds) 1/2 tsp
Haldi (turmeric powder) 1/3 tsp
Salt ( 3/4 to 1 tsp, as per taste)
Lal Mirch (Red Chili powder) 1/4 tsp
Coriander powder/cilantro powder/dhania powder ( 2tsp)
Garam masala (1/3 tsp)
Amchoor powder ( dry mango powder) 1/3 tsp
Bhuna jeera powder (roasted cumin powder) 1/3 tsp
Fresh coriander leaves (hara dhania), a handful

      Azim, I have been using cast iron tawa and pan for quite some time now. It's healthier of course, but needs regular care. It takes a tad bit more oil to cook than what I would use on a non-stick pan, but I guess it's still worth. As for the other cookware, I have no personal experience.

      Hi Sridhar, thanks for giving the recipe a shot. I like your adding little sugar to it. I am sure it added to the flavors. If you wish to have your bhindi softer then cook it covered for a few minutes after initial sauteing. Then later cook it covered/uncovered (as per requirement) with the onion tomato masala. The recipe shared in the video is like the one served in restaurants, but one could always customize it as per one's liking. Thanks for sharing your feedback, and for staying connected

      Hi Poonam...The bhindi turned out fairly well...The onion flaps were crunchy..Tasted good..But I thought ,like I said yesterday, the bhindi was a tad undercooked..I did saute it for 15 mnts with a pinch of salt...yet felt raw .I gave a twist by adding a pinch of sugar to the masala.... Thanks for that Lovely recipe....Waiting for more...

      Thanks a ton! Yeah absolutely, bhindi was cooked properly. When you make this subzi keep the pointers in mind, bhindi needs to be cooked 80% before adding in the onion tomato masala.
